Warm Holiday Salad
Cool fall days call for a warm, nutritious meal and this salad with roasted veggies and prunes is exactly what you are looking for. Colourful, delicious and easy to make it could be perfect addition to your holiday table.
Ingredients:
1 lb/450g Brussels sprouts (trimmed and halved)
1 lb /450g butternut squash (peeled and diced)
3 tbsp olive oil
pinch of salt
1/3 cup roasted almonds
1/2 cup chopped prunes
1/4 cup / 50g goat cheese
Dressing:
1/4 cup olive oil
1/4 cup lemon juice
1 tbsp maple syrup
1/4 tsp salt
Instructions:
Preheat the oven to 400 degrees Fahrenheit.
In a large bowl, toss halved Brussels sprouts and diced butternut squash with 3tbsp olive oil and pinch of salt until well coated.
Spread them onto a large baking sheet lined with parchment paper and roast for about 30 minutes.
Make dressing by combining 1/4 cup olive oil, 1/4 cup lemon juice, 1tbsp maple syrup and 1/4 tsp salt.
Once veggies are roasted, transfer them into a large bowl. Add dressing together with chopped prunes, roasted almonds and goat cheese.
Serve warm.
