Biscotti with Prunes
Biscotti are classic, twice baked Italian cookies that are famous all around the world. They are tasty, perfect for dipping in coffee and you can customize them by adding your favourite dried fruit. Prunes are perfect choice that will make your biscotti even more delicious!
Ingredients:
3 eggs
1/2 cup / 100g sugar
pinch of salt
1 tbsp neutral oil
1/2 tbsp vanilla extract
2 3/4 cups / 350g all purpose flour
3/4 tbsp / 6g baking powder
1/2 cup / 100g chocolate chips
1/2 cup / 100g chopped prunes
1/2 cup / 100g chopped almonds
1 tbsp heavy cream
Instructions:
In a large mixing bowl add eggs, sugar and a pinch of salt and beat on high speed for 2 to 3 minutes until foamy. Add oil and vanilla extract followed by flour and baking powder and beat until well combined.
Add chocolate chips, chopped prunes and almonds and mix just until combined.
Transfer dough on a lightly floured surface and knead a few times to form a cohesive dough.
Divide in half.
Shape each half into a rectangle.
Transfer onto a baking sheet lined with parchment paper. Brush with 1 tbsp of heavy cream.
Bake at 355 degrees Fahrenheit for 25 to 30 minutes, until lightly golden brown.
Pull out of the oven and let it cool for 20 minutes.
Reduce the oven temperature to 325.
Using a sharp knife, cut each piece into 1 inch wide slices.
Place slices back on the baking sheet and bake for another 10 to 15 minutes. If you like your biscotti softer, reduce baking time to 5 minutes.
Let biscotti cool down completely before serving.
