Granola with Prunes

Crispy granola + soft, sweet prunes = perfect breakfast! 

Easy to make, our prune granola is one of those things you can make ahead of time and enjoy any time you need quick, delicious and healthy breakfast! 

Ingredients:

5 cups / 485g oats

1 cup / 236g chopped prunes 

1.5 cup / 354g nuts pecans

1tsp ground cinnamon 

1/2 cup / 118ml coconut/canola or avocado oil

1/3 cup / 108g maple syrup 

1/3 cup / 108g honey

1 1/2 tsp vanilla extract 

Directions:

In a big mixing bowl, combine all dry ingredients except for prunes. Drizzle in the oil, maple syrup and honey. Stir until combined.

Pour the granola onto a baking sheet lined with parchment paper. Spread it in an even layer and press it down with spatula to encourage clumping.

Bake at 350 degrees Fahrenheit for 25 minutes.

Let it cool down completely. Your granola will crisp up as it cools. Break granola into pieces and sprinkle with chopped prunes.

Granola will stay fresh if kept in an airtight container at room temperature for up to 7 days.

 

*Granola might soften a little bit after few says due to fruit moisture. To make it crunchy again, spread it out on a baking sheet and bake for 5 minutes at 400 degrees Fahrenheit.
