Prune Chocolate Balls

Looking for a quick, easy, no bake dessert that tastes great and also looks good? These prune chocolate balls check all the boxes! 

They are perfect for those days when you have no time or energy for complicated recipes. And with some decorating sugar and sprinkles on top, they can be great addition to every party dessert table!

Ingredients:

1 1/4 cup/ 300g pitted prunes

1 tbsp rum

1/2 cup/ 100g chocolate chips

1/2 cup/ 100g ground walnuts

For decorating:

 2/3 cup chocolate chips

1 1/2 tbsp vegetable oil

cake sprinkles (optional)

Instructions:

Chop prunes and add them to the blender together with 1tbsp of rum. Blend until smooth. Transfer the mixture into a bowl and add 1/2 cup melted chocolate chip and 1/2 cup ground walnuts. Mix by hand until all ingredients are well incorporated.

 

Use a tablespoon to scoop out enough of the mixture to form a ball. I used kitchen scale to make sure all my balls are same size. Each one of them weighs 28g/1oz. Roll out in the palms of your hands to make smooth balls. This mixture should be enough to make 18 balls.

Place balls on a baking tray lined with parchment paper and let them cool down in the fridge for about 1 hour. This will make them easier to handle while decorating.

After 1 hour, melt 2/3 cup chocolate chips in the microwave. Add 1 1/2 tbsp vegetable oil into melted chocolate in order to make it smoother and shinier. 

Dip each ball into chocolate and sprinkle with your favorite dessert decorations. Place them on the baking tray lined with parchment paper and let them cool down in the fridge for about an hour.

Keep in an airtight container in the fridge for up to 4 days.
