Walnut Prune Roll

Imagine sweet, tender prunes combined with rich walnut filling and rolled into soft, vanilla and lemon scented dough. Sounds great, right? Even better is that with this step by step recipe you can make it in under 3 hours even if you are not a baking expert! 

This prune walnut roll is perfect when shared with your loved ones over a cup of coffee or tea in the morning or as a dessert after your lunch/dinner.

Ingredients (Dough):

½ cup/ 4.2oz / 125ml warm milk

1 packet of dry instant yeast 

2 1/3 tbsp/ 1oz/30g all purpose flour

2 1/3 tbsp / 1oz/30g sugar

Ingredients (Dough):

2 1/3 cup/ 10.5oz/300g all purpose flour

1tbsp vanilla extract 

pinch of salt

1tbsp lemon zest

¼ cup/ 1.7oz/50g room temperature butter

1 egg

  

Ingredients (Filling):

¾ cup/ 7oz/200g ground walnuts

½ cup/ 3.5oz/100g sugar

1/3 cup/ 3.4oz/100ml warm milk

½ cup/ 3.5oz/100g chopped prunes

 

Dough:

We will start by warming ½ cup/ 4.2oz / 125ml milk up. In order for yeast to activate, milk temperature should be between 110 and 120 Fahrenheit. It took me 30 seconds in microwave to reach this temperature but I encourage you to use your kitchen thermometer to check your milk temperature. 

Add 1 packet of instant yeast, 1oz/30g of sugar and 1oz/30g of flour into warm milk and stir it together. Let stand for about 10 minutes or until foamy.

Once your yeast activated, transfer it to a bigger bowl and add remaining ingredients. Knead the dough for 5 to 10 minutes, until ingredients are evenly mixed into a uniform mass. Cover the bowl and let the dough sit for 15 minutes.

Knead the dough once again for about 5 minutes.

Cover the bowl and let the dough rise for 1 hour in a warm place. If your home temperature is low, turn the interior light in your oven and place the dough inside. This will create perfect temperature for the dough to rise.

 

Filling:

Cut prunes into small pieces. Mix them together with ground walnuts, sugar and warm milk.


Dough:

After your dough has risen, transfer it onto a well-floured surface. Roll it into roughly a 12 by 20 inch rectangle. 

Filling:

Spread the filling onto the dough in an even layer. 

 

ROLL IT!

Starting at one long end roll up the dough into a tight log. 

Transfer the roll to a baking tray lined with parchment paper and bake at 395Fahrenheit for 20-25 minutes, until golden brown on top.Let it cool down slightly, sprinkle some powdered sugar on top and cut into slices. 

This prune walnut roll is equally tasty warm or cold so don’t feel guilty for having a slice shortly after pulling it out of the oven:) 

Keep in an air tight container for up to 4 days. ENJOY!
