Prune Newtons

Sweet, chewy prune filling surrounded by soft, cake like exterior can be great as both dessert and snack. This homemade version is super easy to make and absolutely delicious!

Ingredients:

1/2 cup/ 75g sugar

1/2 tbsp vanilla extract 

1/2 cup/ 100g unsalted butter

1 egg yolk 

2 tbsp Greek yogurt

1 1/2 cups/ 185g all purpose flour 

1 cup prunes 

1/4cup water

Directions

Combine sugar, vanilla extract, softened unsalted butter, egg yolk and Greek yogurt in a big bowl. Mix on low speed for about 2 minutes. Add flour and mix on low speed for another 2 to 3 minutes, until all ingredients are combined.

Divide dough in half and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for 30 minutes.

In the meantime, put prunes and water into a blender and blend until smooth.

Directions:

On a lightly floured surface, roll each disk into a 14 x 6-inch rectangle.

Pipe half of the prune filling down the center of the rectangle. Fold the dough over the filling, pinch the seam to seal and place on a baking sheet lined with parchment paper so the seam is facing down.

Directions:

Bake at 355 degrees Fahrenheit for 25 minutes. Once cooled down, use sharp knife to cut into 1 1/2 inch squares.

Store cookies in an airtight container for up to a week.
