Prune Pound Cake
This soft, moist pound cake with chewy, sweet prunes and crunchy almonds goes perfectly with a cup of tea or coffee.
Ingredients:
1/2 cup / 125g unsalted butter
2/3 cup / 100g sugar
1/2 tbsp vanilla extract
3 eggs
pinch of salt
1 2/3 cups / 200g all purpose flour
1/2 tbsp baking powder
1/4 cup/ 50ml milk
2 tbsp rum
1 cup / 180g chopped prunes
2/3 cup / 70g chopped almonds
Instructions:
Chop prunes and let them soak in rum while you are making cake batter. In a large bowl of a stand mixer add butter, sugar and vanilla extract. Beat for few minutes.
Add the eggs one at a time, beating until well combined before adding the next one.
Add salt, flour, baking powder and milk and beat until all ingredients are well incorporated.
Using a spatula, fold in soaked prunes (along with any remaining liquid) and chopped almonds.
Pour the batter into the prepared loaf pan.
Bake at 350 degrees Fahrenheit for 40 to 45 minutes. Tent the cake with foil for last 15 minutes if it is browning too quickly.
Let the cake cool in the pan for 10 minutes. Remove from the pan, and let cool completely before serving.
